Roasted Vegetables and Ham Strata

Veggie Goat Cheese

10 eggs

½ tsp salt

½ tsp black pepper

½ tsp dried oregano

½ tsp dried thyme

¾ tsp ground cumin

¾ tsp paprika

1 lb. cooked meat – ham (low-sodium), chicken, beef or pork

1 ½ lb. roasted vegetables such as broccoli, cauliflower, onions or red bell peppers, chopped

½ cup shredded Parmesan cheese, optional

  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk the eggs (10) with salt (½ tsp), black pepper (½ tsp), dried oregano (½ tsp), dried thyme (½ tsp), ground cumin (¾ tsp) and paprika (¾ tsp) until light and fluffy.
  3. Grease a 9×13-inch glass dish. Layer dish with vegetables (1 ½ lb.), meat (1 lb.) and half of the cheese (¼ cup), if using.
  4. Pour whisked eggs over vegetables and sprinkle with remaining cheese (¼ cup).
  5. Bake until golden brown and cooked through, about 30-40 minutes.
  6. Cool slightly before serving
